One thing you may hate giving up when following the Dukan Diet or another low carb plan is pizza. No matter how you slice it, normal pizza with its tasty crust doesn’t fit in with most diet plans.
Since I couldn’t eat regular pizza on my diet plan, whether the convenient frozen variety or one made from scratch, I came up with this take on a low carb pizza.
Easy and Delicious Low Carb Pizza
This skillet low carb pizza doesn’t need a traditional crust to taste fantastic and satisfy my desire for pizza. For low fat eating, choose turkey pepperoni and low fat ham along with extra-light mozzarella cheese such as Velveeta shreds. The larger, sandwich-style pepperoni slices work better for this low carb pizza than the smaller slices you’d normally use on pizzas.
I used a 9″ skillet and canola oil spray. I kept my pizza simple, but you can experiment with adding fried onions, sausage and peppers if you desire. I recommend frying these first, then setting aside and making the pizza in the same pan.
Ingredients:
- 4 ounces pepperoni slices
- 4 ounces mozzarella cheese shreds
- 4 ounces deli ham, sliced thick
- 1/4 cup pizza sauce
Directions:
Spray a medium skillet lightly with oil. Cover the bottom of the pan with three or four slices of deli ham, sliced about the thickness of a thin-crust pizza crust.
Allow to fry for a couple of minutes over medium heat until you hear it start to sizzle. Spread pizza sauce evenly over ham, then spread pepperoni evenly over the sauce.
Sprinkle the cheese evenly over top of the pepperoni.
Cover the skillet and continue cooking over medium heat for about 5 minutes or until the ham and cheese look a bit brown around the edges and the cheese completely melts and bubbles.
This recipe makes one single serving low carb pizza. Slide the pizza onto a dinner plate, and enjoy!
