This delicious and easy-to-make chicken pot pie has become a go-to recipe for week night dinners. My younger kid enjoys helping to make it and likes eating it even more.
It’s made with standard ingredients that you can find in any grocery store and keep on hand. We haven’t had good experiences with Walmart’s own brand of refrigerated pie crust, so I’ve been buying them at Aldi or Lidl instead.

Easy Chicken Pot Pie
Whip up this delicious chicken pot pie in a few minutes then pop it in the oven to bake.
Ingredients
- 1 bag frozen mixed veggies OR peas and carrots 12-16 ounce, cooked according to package directions
- 1 can cream of chicken soup 10.5 ounce
- 1/4 tsp salt
- 1/4 tsp pepper or to taste
- 1 cup sour cream
- 1 can chunk chicken breast 12.5 ounce
- 1 box refrigerated pie crusts for two-crust pie
Instructions

Preheat oven to 350 degrees.

Mix the first six ingredients together in a bowl. Spray a glass pie plate with oil and spread out one pie crust into it.

Fill the pie crust with the mixture and top with the second pie crust.

Bake at 350 degrees for about 40 minutes or until crust is lightly browned.

Cool for 5 minutes, then enjoy!
