This salad is known around my house as the “fruity salad,” a name given by my husband, who is always glad when I make it. My six-year-old also likes it, minus the dried cranberries. Kids tend to enjoy eating sweet fruits such as mandarin oranges, and who doesn’t like walnuts?
The recipe is incredibly easy to make – just throw together all of the ingredients in a bowl. You can keep leftovers, if there are any, in a plastic zipper bag.
You can increase or decrease any of the add-ins, depending on your family’s preferences. Some people like more feta and fewer walnuts, for example. Be sure to save the tasty juice from the can of mandarin oranges. It’s delicious, and your kids might want to drink it.
