If your New Year’s Eve just isn’t the same without eggnog, but you’re sticking to low carb eating, I have just the recipe for you.
This low carb eggnog is amazingly easy to throw together. You can use two real eggs instead of the liquid egg product. Personally, I don’t like the idea of drinking actual raw eggs. Eggbeaters are so much easier to work with, too, with no mess from cracking real eggs.
There’s no need to limit drinking this low carb eggnog to holidays. It makes a fantastic low carb snack for between meals, since it’s both tasty and filling.

Ingredients
1/2 cup liquid pasteurized egg product, such as Eggbeaters
3 tbsp Splenda granular
2 1/2 cups skim milk or soy milk
1 tsp vanilla
1/8 tsp nutmeg
1/8 tsp rum extract (optional – or a nip of real rum)
Directions
- Blend all of your ingredients together with a whisk and serve chilled.
- I skip the rum extract, but some people prefer adding that little bit of extra flavor (or adding some actual rum).
- Shake a bit more nutmeg on the top of each drink as a garnish, if desired.
Now, you’re all ready to share a low carb eggnog toast with a friend – or drink it all by yourself.
