Don’t trash those ripe bananas that nobody wants to eat! They’re perfect for this fantastic banana bread that’s easy to whip up in a flash with ingredients you already have on hand.
The kids wolf this down in a hurry, though it does freeze well if you want to double the recipe to make two loaves and keep one for later. To freeze a loaf, wrap it in aluminum foil, then place it in a labeled zipper bag.
Easy and Delicious Banana Bread Recipe
Scrumptious and simple way to use ripe bananas and feed your family a treat.
Ingredients
- 2 large eggs, beaten
- 3 ripe bananas
- 1/2 cup oil
- 1 cup sugar or Splenda
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla
- 3 tbls milk
- 1/2 cup chopped walnuts (optional)
Instructions

Mash the bananas, then add the eggs, sugar and oil.

Blend in flour, baking soda, baking powder and salt.

Add milk and vanilla; mix well.

Add nuts if using.

Turn into greased 9x5x3 loaf pan.

Bake at 350 for about an hour or until knife inserted in center comes out clean.

Mmm. My mother used to make the most delicious banana bread and I loved it SO much. Whenever my friends would come over they would always mob the kitchen cabinet and eat it all! It got to the point (because this bread was one of my happy places, literally) that I would hide the loaves every time that they came over so I made sure I still had some left! They each got a slice of course, but the rest of it was mine! Hahaha…I had completely forgotten about that memory as a kid until I came across this. Thanks for writing!

It’s made with standard ingredients that you can find in any grocery store and keep on hand. We haven’t had good experiences with Walmart’s own brand of refrigerated pie crust, so I’ve been buying them at Aldi or Lidl instead.…
